Summer Strawberry and Spinach Salad

Raspberry Orange Vinaigrette
½ cup canola/olive oil blend (I use only olive oil.)
1/3 cup raspberry vinegar
2 tablespoons orange juice
Sea salt to taste
Ground pepper, to taste
¼ cup fresh chives, chopped (opt.)


Salad
4 cups spinach leaves, washed and dried
1 pint strawberries, washed, hulled, and quartered
½ cup sliced alonds, toasted
½ cup feta cheese crumbles
Combine oil, vinegar, orange juice, salt, pepper and chives, blending well with a whisk.
Arrange spinach, strawberries, almonds, and feta on a platter.  Toss with ½ cup vinaigrette.
Serve remaining dressing on the side.  Serves 4-6.
